Kitchen Hygiene Checklist: The 15-Point Restaurant Sanitation Guide
A 15-point sanitation checklist to post and run every shift, plus the depth behind it: cleaning versus sanitizing, sanitizer concentrations, cleaning schedules, and the violations inspectors cite most.
Kitchen sanitation is the foundation of food safety, and failures are invisible: a surface that looks clean can still carry pathogens, and a sanitizer bucket that was right at opening can be useless by dinner. The CDC estimates 48 million Americans get foodborne illness each year, and a large share of reported outbreaks involve restaurants and food service.
This guide is built around a 15-point checklist you can post and run every shift, followed by the depth behind each point: cleaning versus sanitizing, approved sanitizers and their concentrations, daily and deep-cleaning schedules, and the violations inspectors cite most.
The 15-point kitchen hygiene checklist
- All refrigeration at or below 41°F, checked and logged at opening
- Handwash stations stocked (soap, paper towels, warm water) and used for nothing else
- Fresh sanitizer buckets mixed at opening, tested with strips
- Food contact surfaces cleaned and sanitized before service begins
- Wiping cloths stored in sanitizer solution, never loose on counters
- Full four-step process (scrape, wash, rinse, sanitize) on every food contact surface after each use
- Cutting boards, knives, and utensils cleaned and sanitized when switching between raw and ready-to-eat foods
- Food contact surfaces in continuous use cleaned and sanitized at least every 4 hours
- Sanitizer concentration re-tested every 2 to 4 hours and after every fresh batch
- Sanitized items air dried, never towel dried
- Spills wiped up immediately; floors kept dry and clear
- Trash emptied regularly; receptacles cleaned
- Chemicals stored labeled, away from food and prep areas
- Staff in clean uniforms, hair restrained, jewelry off, illness reported
- Closing routine completed: equipment broken down and sanitized, food covered, labeled, dated, and stored; floors swept and mopped

Cleaning versus sanitizing: two different jobs
Cleaning removes visible soil, grease, and food debris using detergents. A cleaned surface looks clean but can still harbor pathogens. Sanitizing reduces microorganisms to safe levels (a 99.999% reduction) using approved chemicals or heat, and it only works on surfaces that were cleaned first: sanitizer cannot penetrate grease or food soil.
Getting that order wrong is the most common sanitation mistake. Clean first, then sanitize, every time.
The four-step process for food contact surfaces
- Scrape. Remove all visible food debris; pre-rinse if needed.
- Wash. Hot water (at least 110°F) with an approved detergent, scrubbing crevices, seams, and hard-to-reach spots.
- Rinse. Clean hot water, removing all detergent; soap residue neutralizes sanitizer.
- Sanitize. Approved sanitizer at proper concentration for the required contact time, then air dry. Towels recontaminate.
Run the full sequence after each use, when switching between raw and ready-to-eat foods, and at minimum every 4 hours during continuous use.
Approved sanitizers and concentrations
The FDA Food Code recognizes three primary chemical sanitizers:
Chlorine (bleach): 50–100 ppm. Water at 75–120°F, contact time of at least 7 to 10 seconds, most effective below pH 8. Inexpensive and fast, but corrosive to some metals and quickly weakened by organic matter. Roughly 1 tablespoon of plain bleach per gallon of water yields about 50 ppm.
Quaternary ammonium (quats): 200–400 ppm per manufacturer instructions. Water at 75°F minimum, 30-second contact time, effective at pH 7–9. Non-corrosive and longer-lasting, but reduced by hard water.
Iodine: 12.5–25 ppm. Water at 75–120°F, 30-second contact time, works best in acidic solution. Effective and tolerant of organic matter, but stains and costs more.
Test every batch, because concentration cannot be judged by eye: use sanitizer-specific test strips (chlorine strips will not read quats), test at the start of every shift and every 2 to 4 hours, replace solution when it reads low or looks dirty, and log the readings. Heat sanitizing is the alternative: immersion at 171°F for 30 seconds, or a 180°F final rinse in high-temperature dish machines.
The daily schedule
Opening: refrigeration temperatures checked and logged, sanitizer buckets mixed and tested, prep surfaces sanitized, handwash stations stocked, clean uniform and apron on.
During service: clean as you go. Surfaces after each use and between raw and ready-to-eat tasks, everything in continuous use at the 4-hour mark, spills immediately, trash before it overflows.
Closing: all food covered, labeled, dated, and refrigerated; equipment broken down, cleaned, and sanitized; grills, fryers, and ranges cleaned per their procedures; counters and boards sanitized; sinks and drains cleaned; floors swept and mopped; a final walkthrough before lights out.
Weekly, monthly, and quarterly deep cleaning
Weekly: walls and ceilings around cooking areas and vents, refrigeration interiors including shelves and door gaskets, ice machines, floor drains flushed with degreaser, exhaust hood filters degreased, storage areas checked for pests, beverage equipment cleaned.
Monthly: behind and under equipment, light fixtures, dry storage shelving with expiration checks, fryer boil-out, oven deep clean, freezer defrost, full wall washing, dumpster and receiving areas.
Quarterly (professional services): exhaust system cleaning (required by fire code), grease trap service, pest control inspection, equipment maintenance and calibration.
Equipment-specific procedures
The three-compartment sink has a fixed setup: sink one washes at 110°F+ with detergent, sink two rinses with clean hot water changed frequently, sink three sanitizes at tested concentration for the full contact time, and everything air dries on a clean rack.
Commercial dishwashers need daily cleaning of spray arms and screens, monthly deliming, and temperature verification: 180°F final rinse for high-temp machines, or correct chemical sanitizer levels for low-temp machines.
Slicers, grinders, and can openers are where inspectors find the buildup everyone else missed. Unplug, disassemble per the manufacturer, clean every part including blade guards and gear areas, sanitize, and reassemble dry. Slicers in continuous use follow the same 4-hour rule as everything else.
Cutting boards get cleaned and sanitized after each use, follow a color-coding system to prevent cross-contamination (see our cross-contamination guide for the full system), and get replaced once deeply scored, because grooves shelter bacteria that cleaning cannot reach.
Personal hygiene is part of sanitation
Most contamination arrives on hands. Handwashing at the right moments, done right (20 seconds with soap and warm water, dried with single-use towels), correct glove use for ready-to-eat foods, clean uniforms, hair restraints, no jewelry beyond a plain band, short clean fingernails, and illness reporting: vomiting, diarrhea, jaundice, or a sore throat with fever means not working with food that day. The seven mistakes inspectors see constantly
- One wiping cloth for everything, spreading contamination surface to surface. Cloths live in sanitizer solution and change frequently.
- Never testing sanitizer. Too weak does nothing; too strong leaves chemical residue.
- Towel drying after sanitizing, which undoes the work.
- Sanitizing dirty surfaces. The sanitizer fails and the surface stays hazardous while looking treated.
- Wrong sink for the job: handwashing in prep sinks, mop water in food sinks. Each sink has one purpose.
- Chemicals stored over or near food. Designated storage, original labeled containers.
- Skipping the 4-hour rule on long shifts, letting bacteria multiply on "in-use" equipment all day.
These map directly onto the most-cited inspection violations: dirty food contact surfaces, cloths out of sanitizer, three-compartment sinks set up wrong, no test strips on site, blocked handwash sinks, and inadequate cleaning frequency.
Documentation: prove it happened
Health inspections reward operations that can show their work: a daily cleaning checklist with initials, a sanitizer concentration log with readings and corrective actions, equipment cleaning logs, the deep-cleaning schedule with sign-offs, and pest control service records. Documentation is also what turns a sanitation program from word of mouth into a system that survives staff turnover.
Common questions
Can I use the same sanitizer solution all day? No. Replace it when it reads below minimum concentration, when it looks dirty, or every 2 to 4 hours. Organic matter kills its effectiveness quickly.
Do floors need sanitizing? Floors are non-food-contact surfaces: clean daily with detergent and hot water, but reserve the sanitizing rigor for food contact surfaces.
Can I use vinegar as a sanitizer? Not in commercial food service. The Food Code requires approved sanitizers (chlorine, quats, iodine) or heat at validated concentrations and contact times.
Are color-coded cutting boards required? Not by the FDA Food Code, but they are the industry-standard best practice, and inspectors read them as a sign the kitchen takes separation seriously.
What if an inspector finds a violation? Correct it immediately where possible, document the corrective action, take damaged equipment out of service, retrain on the failed procedure, and request re-inspection once resolved.
