Proper Food Storage: Refrigeration, Freezing, and Dry Storage
Storage temperatures, the top-to-bottom refrigerator order, FIFO rotation, containers, safe thawing, and walk-in practices.
Storage is where food spends most of its life, and most storage failures are invisible until someone gets sick: a cooler running two degrees warm, raw chicken over the salad greens, a use-by date nobody checked. This guide covers the temperatures, the storage order, FIFO rotation, containers, safe thawing, and the walk-in practices that keep stored food safe.

The three storage zones and their temperatures
Refrigeration: 41°F or below. Aim for 38–40°F for a buffer against door openings and warm deliveries. Put the thermometer in the warmest part of the unit (usually near the door), check at least at the start and end of each shift, and log it. Do not overload the unit: airflow is what makes the temperature real on every shelf.
Freezing: 0°F or below. Frozen food stays safe indefinitely at 0°F; what degrades is quality, which is why the storage times below are quality guidelines rather than safety deadlines. Airtight packaging prevents freezer burn.
Dry storage: 50–70°F, moderate humidity, off the floor, out of direct light, in sealed containers that pests cannot reach.
The top-to-bottom storage rule
Refrigerator organization follows one principle: nothing may drip onto food that will be cooked less than it, or not cooked at all. The order, top to bottom, tracks required cooking temperatures:
- Top: ready-to-eat foods. Prepared items, leftovers, deli meats, desserts. Nothing above them, nothing drips on them.
- Second: seafood (cooks to 145°F).
- Third: whole cuts of beef and pork (145°F, but they drip more than seafood).
- Fourth: ground meats (155°F: grinding spreads surface bacteria throughout).
- Bottom: poultry (165°F, the most likely to carry Salmonella; the bottom shelf means its drips reach nothing but the floor).
- Drawers: produce, protected from everything above.
All raw animal products go in leak-proof containers regardless of shelf. And no, covered raw chicken still cannot live above ready-to-eat food: lids loosen, containers drop, condensation drips.
FIFO: first in, first out
Rotation is what keeps the storage order from becoming a museum of expired food:
- Label everything: product name, prep or receiving date, use-by date, initials. Example: "Chicken salad | Prep 1/15 | Use by 1/18 | JM"
- New stock goes behind old stock, always, including during receiving when it is tempting to just slide boxes in front
- Pull from the front, check dates daily, and discard expired items on sight
Prepared TCS foods held at 41°F or below get a maximum of 7 days including the prep day (some jurisdictions require less; check your local rules).
Containers
Use food-grade containers with tight-fitting lids: NSF-rated plastics, stainless steel, or glass where breakage risk is acceptable. Square containers use space better than round. Get food out of cardboard shippers before storing (cardboard holds moisture and pests and cannot be sanitized), keep everything at least 6 inches off the floor, and cover all food, including in the walk-in. Once a can is opened, its contents move to a food-grade container: acidic food reacting with can metal is not a flavor upgrade.
How long food keeps
Refrigerated at 41°F or below (safety and quality):
- Raw ground meat, poultry, fresh seafood: 1–2 days
- Raw whole cuts: 3–5 days
- Cooked meats, pasta, rice: 3–4 days
- Prepared salads: 3–4 days
- Milk: about 7 days after opening; eggs: 3–5 weeks in the carton, never in the door
Frozen at 0°F (quality guidelines):
- Ground meat: 3–4 months; whole cuts: 4–12 months
- Whole poultry: up to 12 months; parts: about 9 months
- Fatty fish: 2–3 months; lean fish: about 6 months
- Cooked dishes, soups, stews: 2–3 months
Thawing without creating a hazard
Never thaw at room temperature. The outside of the food enters the danger zone hours before the center thaws. Four methods work:
- Refrigerator thawing (best): bottom shelf, leak-proof container, about 24 hours per 5 pounds. Cook within 1–2 days.
- Cold running water: submerged in waterproof packaging under running water at 70°F or below. About 30 minutes per pound, and the food must be cooked immediately after.
- Microwave defrost: only for food going straight into cooking, since edges can enter the danger zone.
- Cooking from frozen: add roughly 50% more cooking time and verify the same internal temperatures.
Refreezing is allowed only for food thawed in the refrigerator that stayed at 41°F or below, or food that has been cooked since thawing.
The six storage mistakes that cause the most trouble
- Overstuffed refrigerators. Blocked airflow means warm pockets the thermometer never sees. Keep units at roughly 70–80% capacity.
- Hot food straight into the cooler. It drags the whole unit up. Cool to 70°F first with shallow pans or an ice bath, then refrigerate (full cooling rule: 135°F to 70°F within 2 hours, then to 41°F within the next 4).
- Unmonitored temperatures. A failing compressor announces itself in the log days before it announces itself in spoiled product.
- Non-food items in food refrigeration. Chemicals, medications, and personal items get their own storage, always.
- Trusting packaging over dates. FIFO with daily date checks, no exceptions.
- Cardboard in the walk-in. Transfer to real containers at receiving.
Walk-in practices
Organize by zone with clear aisles, wire shelving for airflow, everything 6 inches up, and the most-used items near the door so it spends less time open. Monitor with thermometers in the warmest and coldest spots. Maintain it: spills immediately, floors and shelves weekly, coils and drain lines monthly, professional service quarterly. And test the interior emergency release monthly; a walk-in is also a room a person can be inside when the door closes.
Common questions
How long can food sit in the danger zone? Four hours cumulative across the food's entire life, not per incident. Refrigeration pauses the clock; it never resets it. Past four hours, discard.
What temperature should the refrigerator really run at? 38–40°F. The 41°F line is the legal maximum, not the target, and a calibrated probe thermometer is the referee, not the unit's built-in display.
Do I need to cool food before refrigerating it? To 70°F, yes, using shallow pans or an ice bath. Slow-cooling a stockpot on the counter fails the 2-hour rule while warming everything else in the cooler once it goes in.
Should produce be washed before storage? No. Moisture accelerates mold. Store unwashed, wash immediately before use.
Is vacuum-sealed food shelf-stable? No. Vacuum sealing extends quality, not safety rules: it still needs refrigeration or freezing, and some sealed items carry their own risks (garlic-in-oil is the classic botulism example).
