Who Needs a Food Handler Card in Hawaii?

According to the Hawaii Department of Health, every food establishment must have at least one employee present at all times who holds a valid food handler certificate. Because someone with a certificate must be on-site during all operating hours, most managers and supervisors are required by their employers to get a food handler certificate. Otherwise, a designated employee must have a food handler certificate if a manager is not present. Even though the law only requires one certified person on-site, many employers require all staff members who handle food to obtain a card to ensure they never fall out of compliance during shift changes.

Hawaii Food Scene

Hawaii's food culture is a true fusion of Native Hawaiian, Japanese, Portuguese, Korean, Filipino, and Chinese traditions layered over decades of plantation-era immigration. The plate lunch — two scoops of white rice, macaroni salad, and a protein like katsu or kalua pork — is the state's working-class culinary icon. Poke bowls, born in Hawaii's fish markets, became a national trend but remain most authentic here, made with fresh ahi tuna seasoned simply with sea salt, soy, and sesame. Spam, introduced by the U.S. military, is embraced without irony: Hawaii consumes more Spam per capita than any other state.
Known for: Plate lunch, poke bowls, Spam musubi, shave ice, Hawaiian BBQ kalua pork, malasadas
